2 cups spring greens
1/2 cup cubed cooked butternut squash
1/2 cup diced cooked baby beets
1/2 cup garbanzo beans, drained
1/2 cup lightly toasted walnuts
1/4 cup roasted red pepper
1/4 cup thinly sliced red onion
Sea salt and fresh ground pepper to taste
4 Tbsp Heavenly “Picual” or another mild or medium extra virgin olive oil
4 Tbsp Heavenly Fig balsamic
1/3 cup bleu or feta cheese crumbles
5 or 6 sliced green olives
Mix greens and next 6 ingredients.
Toss lightly with olive oil and balsamic.
Salt and pepper to taste.
Top with cheese and olives.
