Pears braised with Raspberry Cinnamon Pear Caramel Sauce – Chef Mike Silber

8 medium pears, not too ripe
6 Tbsp sugar
2 Tbsp Heavenly Butter olive oil
1/3 stick sweet cream butter
1 cup heavy cream
1/3 cup Heavenly Wild Raspberry balsamic
3 Tbsp Heavenly Cinnamon Pear balsamic
Dash of cinnamon
Dash of allspice
Ice Cream

Peel pears. Cut into quarters. Remove core and lay in skillet.
Sprinkle with sugar and dot with butter. Drizzle with Butter olive oil.
Cook over medium heat 10-12 minutes, stirring gently every few minutes.
Add balsamics and cook additional 10-12 minutes until sugar caramelizes.
Pears should easily pierce with a knife at this point.
Pour cream over pears and return to heat, stirring occasionally another 5-10 minutes.
Cream should reduce and turn a deep ivory color.
If butter and cream begin to separate, add 1-2 tablespoons of water to the mixture.
Remove from heat, allow to cool slightly.
Serve warm over ice cream or frozen yogurt.

Oven option:
Follow the same directions except cut pears in half.
Lay flat side down in baking dish and bake at 425 degrees.
Rest of recipe is the same except:
Increase cook time once the cream is added to 20 minutes.
Do not stir pears while baking.
Baste pears every 5 minutes once cream is added.
