2 Tbsp Heavenly “Cobrancosa” or another medium extra virgin olive oil
2 Tbsp Heavenly Key Lime balsamic
2 cups diced tomato
2/3 cup small diced red onion
½ cup cucumber, peeled, seeded and diced small
1 ½ cup diced mango
1 bunch cilantro chopped
½ Tbsp minced jalapeno
¼ tsp black pepper
Optional: add ¾ cup mince jicama
Mix all ingredients.
Refrigerate for 1 hour before serving.
Serve with tortilla chips.
