Smoked Ribs with Raspberry and Espresso balsamic – Chef Mike Silber

2 slabs baby back or St. Louis style ribs
3/4 cup Heavenly Olive Wood Smoked olive oil
1/3 cup Heavenly Wild Raspberry balsamic
1/2 cup Heavenly Espresso balsamic
Kosher salt
White pepper
Garlic salt or granulated garlic
Pinch of cayenne
¾ cup water
1 whole onion, sliced

Cut ribs apart into individual ribs.
Mix oil and balsamics in large mixing bowl. Add ribs and toss to coat well.
Mix spices, and season ribs to taste.
Pup meat in an oven roasting bag and place bag in roasting pan.
Add sliced onions and close bag.
Bake at 275 degrees for 6 hours.
For browner ribs, open bag for last 45 minutes and increase temperature to 325.
Cook times may vary. Ribs are done when the meat is easily pulled from the bone.
Serve as is or with bbq.
**Note- Ribs can be done ahead in oven and reheated on the grill to add a little char and caramelization if desired.
