Dressing:
2 Tbsp honey
1 Tbspdijon mustard
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
3 Tbsp Heavenly Sicilian Lemon balsamic
Salad:
1/4 cup Heavenly “Chiquitita” or another mild extra virgin olive oil
6 cups spinach
1 cup fresh blueberries
1 cup thinly sliced cucumber
1/3 cup coarsely chopped toasted hazelnuts, divided
1 ripe avocado, thinly sliced
3 hard boiled eggs, peeled and sliced
Whisk together honey, mustard, salt and pepper in small bowl.
Whisk in balsamic.
Whisk in olive oil until thoroughly mixed.
Toss together spinach, berries, cucumber and half hazelnuts in large bowl.
Drizzle dressing over salad and toss to combine.
Top with avocado, eggs and remaining hazelnuts.
