2 pounds top round roast beef (raw)
2/3 cup Harissa olive oil
1/2 cup Traditional balsamic
2 Tbsp kosher salt
2 Tbsp black pepper
1 large sized red onion, diced (set some aside for a topping later)
1 quart water
3 regular sized cans diced tomatoes
2 10 oz cans tomato sauce
1/4 cup chili powder
2 Tbsp ground cumin
3 regular sized cans chili beans
1/2 tsp worcestershire sauce
1 beef bouillon cube
Dice meat into 1 inch cubes and mix with the spicy olive oil, salt and pepper.
Sear meat on all sides in a hot skillet, about 1/2 pound at a time.
Beef should still be mostly raw.
Add Traditional balsamic and transfer to a large oven-safe casserole dish.
Add all other ingredients except the beans.
Bake uncovered in a 325 degree oven for 2-3 hours, stirring every half hour or so.
Add more water if mixture gets too thick or dry.
Remove from oven and add beans.
Drizzle Heavenly Traditional or any dark balsamic on top, top with chopped onions.
