¼ red onion, very thinly sliced
2 Tbsp Heavenly Sicilian Lemon balsamic
3 Tbsp Heavenly Orange olive oil
1 Tbsp Heavenly Red Apple balsamic
½ medium watermelon, cut in small chunks
3 cups baby greens
½ cup fresh mint leaves
¼ cup crumbled pecorino, Romano or feta cheese

Toss onions and Sicilian Lemon balsamic, let marinate 2 hours or up to 24 hours.
Combine Orange olive oil and Red Apple balsamic, whisk to combine.
Mix all other ingredients in a large bowl, add onions and dressing.
Toss to combine and serve immediately.
