2 pounds smooth skinned potatoes, washed clean
1/3 cup Heavenly Herbes de Provence olive oil
5 or 6 green onions sliced with green and white parts
1/4 cup chopped red onion
2 Tbsp regular or flavored mustard
4 Tbsp Heavenly Neapolitan Herb balsamic
1/2 cup coarsely chopped flat leaf parsley
Season to taste with sea salt and fresh ground pepper
Put potatoes in medium saucepan, cover with water and bring to a boil.
Cook 20 minutes or until fork goes into potato easily.
Remove from heat and rinse immediately with cold water.
Set aside to cool.
Stir together olive oil, onions, balsamic, salt and pepper in small mixing bowl.
Slice potatoes, toss gently with dressing and parsley.
Transfer to serving bowl.
Serve room temperature or chill 2 hours.
