Chicken Parmesan – Chef Mike Silber

Chicken & Turkey

4 boneless chicken breast halves
Salt and pepper to taste
2 eggs
1 cup bread crumbs
½ cup grated parmesan
½ cup flour
1 cup Heavenly Milanese Gremolata olive oil
5-6 fresh basil leaves
More parmesan to taste
Optional: sliced provolone or mozzarella

Pound out chicken breasts with flat side of meat mallet to 1/2” thick or less
Mix bread crumbs and ½ cup parmesan
Beat eggs
Dredge chicken breasts in flour, then in egg
Toss with bread crumb mix and set aside for 5-10 minutes
Heat olive oil in skillet or braising pan until it shimmers
Carefully place chicken breast in oil
Cook until golden brown, 3-4 minutes per side
Serve immediately with sauce of choice
(Optional: Melt a slice of provolone or mozzarella over each breast before serving)
Garnish with fresh chopped basil and additional parmesan to taste

Note: If cooking for larger group, brown the chicken in skillet, but cook less than halfway through. Then 15 minutes prior to serving, finish in 350 degree oven. Cook 10-15 minutes until chicken is done. Slice one open to visually see that it is done, then serve immediately.
