Apple Tartlet – Chef Mike Silber

1 pie crust, cut out 2” discs
Cinnamon and sugar to taste
6-8 Granny Smith or Jonathan apples
¼ cup Heavenly Butter olive oil
¼ cup Heavenly Cinnamon Pear balsamic
½ cup brown sugar
Ice cream

Cut disks out of pie crust and arrange on cookie sheet.
Sprinkle with cinnamon sugar and bake to golden brown. Set aside.
Peel, core and slice (or dice) apples.
Place in braising pan or skillet.
Add Butter olive oil and brown sugar.
Cook until apples are medium tender.
Add balsamic. Spoon into ramekin (glass or ceramic dish).
Top with crust and serve with a scoop of ice cream.

Alternative:
Cook apples, let cool and spoon into 5” squares of puff pastry.
Top with another square of pastry and press edges to seal.
Bake at 375 degrees for 20-25 minutes.
Turn over and bake additional 5 minutes until pastry is golden and flaky.
Serve with ice cream.
